Fresh Raspberry Sauce A fruity, smooth and silky sauce to serve on ice cream, or to pool on a plate with a wedge of chocolate cake or cheesecake on top. Makes 1 cup 3 cups (750 mL) fresh raspberries 1⁄ cup (125 mL) icing sugar 2 1 tablespoon (15 mL) lemon juice Place all ingredients in food processor and pulse until very smooth. Set a fine sieve over a medium bowl. In batches, strain the raspberry mixture through the sieve, using a whisk to ensure as much liquid gets pushed through the sieve and into the bowl as possible. Sauce can be kept in the fridge for a week, or frozen for several months.
